By special request of Aunt Khamla. This pie was a staple in our school aged years. It is very simple and delicious. You can get as fancy as you want, but the quick & easy is still pretty tasty. You can make home made mashed potatoes, layer another can of hash in the middle, make your own hash, etc... just make sure the ingredients are not too wet, or you will get soup.

Ingredients[]

  • 1 box instant mashed potatoes, prepared per instructions
  • 1 can corned beef hash
  • vegetable oil

Directions[]

  • Preheat oven to 400 degrees
  • grease the pan with vegetable oil or Crisco
  • shred/fluff up with corned beef hash in a bowl
  • layer the hash into the bottom of the pan
  • top with mashed potatoes
  • bake for 15 minutes or until brown (all the ingredients are already cooked)
