Sweet Coconut Mango Sticky Rice is a great quick dessert to whip up if you discover that you steamed too much sticky rice (which is often the case for me). Off the top of my head, it is the one time that I can think of that sticky rice should be eaten with a utensil. This recipe is for topping about 3 cups of uncooked rice.

Ingredients: Edit

  • Fresh Steamed Sticky Rice
  • 1 Can Coconut Milk
  • 3/4 Cup Palm or Brown Sugar
  • 1 Tsp Salt
  • About 4 Mangoes, Peeled and Sliced

DirectionsEdit

  1. Heat the coconut milk, sugar, and salt in a pot under low-medium hea (Do not boil.)
  2. Pour 1/2 the hot coconut milk over the rice, stir in, and allow to sit for several minutes
  3. Serve with the sliced mango
  4. Reserve the rest of the mixture in a bowl for guests to add more if desired
